Easy Spring Roll Recipes for a Quick, Vegetarian, Healthy Dinner

We all know how much spring rolls can be a piece of heart for us. Common, aren’t those delicious fried rolls, be they veg or non-veg, lip-smackingly delicious? But for our Calorie community, we understand that a cheat day can be tasty and healthy too. Due to popular demand, we have come up with our first Healthy to Cheat recipe series. What could be better than a “Veggie Spring Roll”? Try this out yourself, and you can sleep guilt-free and enjoy as many as you want because 7-8 spring rolls will give you 700-800 kcal with up to 54 g of protein! Yup, that’s true.

Spring Rolls Recipe

Prep Time: 15 minutes Cook Time: 15 minutes Total Calories: 350-400 calories

Ingredients for Spring Rolls

Rice paper wraps (store-bought)
Mushrooms
½ cup firm soya tofu
½ cup carrots
½ cup onions
1 tbsp Garlic
1/4 cup Cilantro leaves

Ingredients for Dipping Sauce

4 Tbsp of soy sauce
2-3 cloves of garlic
½ tbsp peanut butter
1 tbsp oyster sauce
1 tbsp chilli oil

Instructions

To make veggie spring rolls

Prepare the filling:

Heat a pan and sauté garlic in a little oil until fragrant
Add onions and cook until soft.
Stir in mushrooms, carrots, and tofu. Cook for 3–4 minutes.
Season with soy sauce, chili oil, salt, and pepper, and let it cool.

Assemble the rolls:

Soak a rice paper wrap in warm water for a few seconds until soft.
Place it on a flat surface and add some filling in the center.
Sprinkle chopped cilantro on top.
Fold in the sides, then roll tightly like a burrito.

Cook the rolls:

Heat the pan with some olive oil or avocado oil.
Place the wraps and sprinkle some sesame seeds on the top of the rolls and cover them with the lid.
Keep the heat on a low flame, allowing the rolls to cook and also preventing them from getting burnt.
Once the bottom gets golden brown, turn off the heat and assemble

Note:

Make sure to dip rice paper in lukewarm water for no more than 5-10 seconds on each side. Rice paper becomes even softer when you start filling.
Always use the double wrap method. Once you make a burrito, put that on another soaked rice paper and wrap it around the previous one.

Prepare the Dipping Sauce :

Mix all the ingredients mentioned above and whisk them well until the peanut butter dissolves into the sauce.
